SWEDISH PANCAKES & PEANUT BUTTER SYRUP
Swedish Pancakes:
2 eggs, beaten 1/2 cup flour
1tsp. sugar 1 cup cram or milk
1/4 tsp. salt
Mix above ingredients. May need to add more liquid, depending on your prefrence for thin-ness. These are like crepes. You can add a combination of milk, cream & butter to make the one cup of liquid.
Other option: to make oven swedish pancakes. Fry tiny cubes of salt pork, if you like, in a fry pan. Leave some of the grease to grease the sides and bottom of pan. I add butter or margarine sometimes. Bake in 350 degree oven or an hour or longer, sometimes it takes longer then an hour depending on your oven. Stick a knife in center if it comes out clean it is done. Serve with butter and syrup or with powder sugar and berries, or with peanut butter syrup.
Peanut Butter:
1 cup white sugar 1 cup brown sugar
1 cup water 1or2 cups crunchy peanut butter
1tsp maple flavoring
Put all ingredients in pan except maple flavoring. Boil until peanut butter thoroughly melted! Add maple flavoring & serve hot over swedish pancakes, waffles or regular pancakes. |
