3-4 boneless skinless cooked chicken breasts, chopped
1 16oz. jar of salsa
1 15oz. can black beans (drained)
1 medium onion chopped
1 clove garlic, chopped
2-3 tomatoes, chopped
12-16 oz. Monterey Jack cheese, grated
1/2 bunch cilantro, chopped
Flour or corn tortillas, optional
Heat oven to 350. Mix all ingredients in a large bowl. Cook in a 13" x 9" pan for 40 minutes.
It was originally a casserole dish, but we like to use it as taco or burrito filling.
