Recipe: AUTUMN POUND CAKE INGREDIENTS 3 cups All-purpose flour 1 tsp. Baking soda 1/2 tsp. Baking powder 1 tsp. Salt 1 tsp. Pumpkin pie spice 1/4 cup Butter or margarine, softened 2 1/2 cups Sugar 4 Eggs 2 tsp. Maple extract 1 15 oz. can Princella or Sugary Sam Cut Sweet Potatoes, drained and mashed DIRECTIONS Preheat oven to 325°F. Lightly grease 12-cup tube pan; set aside. Combine flour, baking soda, baking powder, salt and pumpkin pie spice; set aside. Place butter and sugar in large mixing bowl and beat with electric mixer until light and fluffy. Beat in eggs and maple extract. Alternately beat sweet potatoes and flour mixture into creamed mixture. Beat at low speed 1 minute. Pour into prepared pan. Bake 50 to 60 minutes until toothpick inserted in center comes out clean. Cool in pan on wire rack 5 minutes. Remove from pan and cool completely on wire rack.
