Recipe: Diet Mountain Dew Cake with no sugar added Does someone in your house have diabetes or maybe even a close friend. Or have you ever wanted to make a cake that has no sugar added what so ever, except natural sugars and still have it taste simply delicious. Then this is the cake for you, you can use whatever soda or fruit you desire this cake is versatile. Try not to over-cook the cake when baking and make sure your timer has been set. This cake is great to eat, nice and fluffy and simply delicious with a taste of heaven added, with no extra pounds added to those nasty numbers on the scale. 2 c. flour 1 tbsp. baking powder 1 tsp. salt 1/2 c. butter, softened 2 eggs 1 can 12 oz. diet mountain dew or (other favorite diet soda) 1 tsp. vanilla Two tubs fat free sugarless cool whip Strawberries Blueberries Kiwis Or other favorite natural fresh fruit Beat butter until light and fluffy. Sift together the flour, baking powder and salt,Set aside. To mix the cake add the flour mixture slowly to butter mixture in a large bowl, beating well (300 times). Add half of the flour mixture, then half of the diet mountain dew and the vanilla. Mix (50 times). Add the eggs, beating well after each addition. Add the remaining flour mixture, then the rest of the diet mountain dew. Mix until smooth (200 times). Fill a greased, floured baking pan or two layer pans no than half-full. Bake at 375 degrees (moderate oven) 25 to 35 minutes until cake springs back when lightly touched near center. Cool on a wire rack. When cool place a plate over top of one pan and flip. Shave off top and edges until even. Do the same to the other cake. Frost your cool whip over top and side of cake add strawberries and blueberries. Add top of cake frost with leftover cool whip and decorate as desired with left over fruit. Enjoy!
