2 Cups uncooked Penne Rigate Pasta
1/2 lb Soy Sausage
1 Medium Onion, Chopped
3 Cloves Garlic, Minced
1 16oz Can Diced Tomatoes
1 7 1/2 oz Jar Roasted Red Peppers, Chopped
1 10oz Package Frozen Spinach
Grated Parmesan Style Soy Cheese
o Cook pasta according to package instructions.
o In large skillet cook soy sausage, onion and garlic with a little olive oil over medium heat, slowly stirring.
o Add tomatoes and peppers, bring to a boil.
o Reduce heat to low and simmer uncovered for 4 minutes.
o Stir in spinach, cook 1 minute.
o Mix in drained pasta.
o Sprinkle with Parmesan and serve. |
