Skillet Potatoes with Bacon and Cheddar |

4 slices of bacon cut into pieces
1 onion chopped
6 tbsp sour cream
2 lbs yukon gold potatoes sliced
1 cup shredded cheddar cheese
Cook bacon unitl crsip. Remove bacon with slotted spoon and add onions cook them for 5 minutes. Stir in potatoes. Cover and cook on med low heat for about 20-25 minutes or until potatoes are tender. Top with cheese and bacon and cook covered until cheese is melted. Top with sour cream. |
