Stuffed Greek Chicken

Recipe: Stuffed Greek Chicken 1 pack of chicken breast halves (4) ½ small red onion, diced fine 6-7 roasted red tomatoes in oil, chopped 1 cup fresh spinach leaves, chopped 10 Kalamato olives chopped 2-4 oz crumbled feta cheese, to taste 1/2 cup of Greek Vinagrette Dressing Plus rest of bottle of Greek Vinagrette Dressing Combine all in small bowl, except chicken and Bottle of dressing Add 1/2 cup of dressing to veggies and Feta to moisten. Stir. Cut a slit in chicken breast to form a pocket for filling. Season chicken to taste. Place in baking dish. Stuff will filling, Pour rest of Greek Vinagrette Dressing on chicken. Bake at 350° degrees for 35-40 minutes or until chicken is cooked through. Makes 4 servings
