Grilled Cornish Hens w/ Rasberry Vinegarette |

3/4 cup red rasberries(can be frozen), I like to use 1 cup
1 cup vinegar
2 Tbs lemon juice
1 garlic clove (crushed)
2 Tbs mint(optional)
1/2 cub olive oil
2 cornish game hens(split)
(All you made need to buy are the hens and the rasberries.)
In a bowl combine red rasberries, vinegar, lemon juice, garlic clove, mint and olive oil.
Split cornish hens down the middle, flatten and arrange in a 13x9 shallow dish. Pour the vinegar mixture over the hens and let them marinate in the fridge for about 1-3 hours. Grill skin side down for 10 minutes, turn and continue cooking for 20-25 minutes, or until there is no more pink in the middle. While grilling baste with mixture.
i'm sure this could also be done in the oven, but i have never done it this way.
