Breakfast Quesadilla

Recipe: 1/2 cup Crumbles Morningstar Farmsâ„¢ Sausage Style Recipe Crumbles 1/2 cup chopped onion 1 teaspoon vegetable oil 1/4 cup chopped fresh cilantro 6 eggs 3 tablespoons fat free milk 1/4 teaspoon salt 1/8 teaspoon pepper 1 tablespoon butter or margarine 4 burrito-size flour tortillas 2/3 cup shredded cheddar cheese or Monterey Jack cheese Reduced-fat sour cream (optional) Salsa (optional) Directions: 1. In large nonstick skillet cook and stir MORNINGSTAR FARMS Sausage Style Recipe crumbles and onion in oil over medium heat until onion is tender. Stir in cilantro. Remove from skillet; keep warm. 2. In medium bowl beat together eggs, milk, salt and pepper. In same skillet melt butter over medium heat. Pour in egg mixture. Cook over medium heat without stirring until mixture begins to set on the bottom and around the edges. Using spatula lift and fold eggs so uncooked portion flows underneath. Continue cooking over medium heat for 2 to 3 minutes or until eggs are cooked through. 3. Evenly spoon eggs onto 2 of the tortillas. Sprinkle with MORNINGSTAR FARMS Sausage Style Recipe crumbles mixture. Top with cheese and remaining tortilllas. Return to skillet and cook over low heat, turning if necessary, until the cheese is melted. Repeat procedure again for second quesadilla. 4. Cut each quesadilla into 8 wedges. Serve with sour cream and salsa, if desired.
