2 green peppers chopped
1 pound hot italian sausage, casings discarded
8oz packgage sliced white mushrooms
1 red onion chopped
1 package uncle bens long grain and wild rice, microwaveable
Heat a large skillet over medium heat. Add 1 tablespoon olive oil and the sausage and cook, breaking up the meat until browned, about 6 minutes. Using a slotted spoon transfer the sausage to a bowl. Add 1 more tablespoon olive oil the bell peppers, mushrooms and onion. Season with salt and pepper and cook until veggies are crisp tender about 6 minutes. Follow directions on package for the microwaveable rice. Add rice to the meat. Add veggies to the rice and sausage and toss. Serves 4. |
