Red Beans & Rice
1 lb Red Kidney Beans (1 bag)
1 onion, chopped
About 6 cups of water
Tony’s Creole Seasoning – to taste
1 lb Smoked Sausage (1 pkg), sliced or chopped into chunks
Rice, cooked
THE NIGHT BEFORE – soak beans overnight in water- enough to cover beans and allow for expanding.
Combine beans, onion, water, and seasoning in Crock Pot.
Cook on High for 12 hours, smashing beans against the side of the pot with a wooden spoon as they soften.
About 30 minutes before ready to serve, add sausage to the pot and cook the rice.
Serve beans and sausage over rice.
Goes great with cornbread!
