Roasted Red Pepper Bisque

Recipe: 3 med red peppers halved & seeded 1 lg onion chopped. 2 lg cloves garlic, minced 1 cup chopped celery 2 TBSP olive oil 1 cup V8 juice 3 cups vegetable broth ½ tsp. salt ¼ tsp. pepper Place peppers skin side up on shallow baking pan. Broil until skins are blackened. Remove from pan and place in plastic bag. Let sit and steam 10 min. Remove from bag and peel, discard skin. Cut into 1 in pieces. Meanwhile in saucepan cook onion, celery & garlic in olive oil over medium heat until softened. Add chopped peppers, veg broth, V8 juice, salt and pepper. Bring to a boil. Cover and simmer 10 minutes. Remove from heat and let stand at least 5 minutes. Blend all ingredients.
