Baked Potato Soup

Recipe: 4 large baking potatoes 1/2c reduced cal margarine 1/2c flour 6c fat free milk 1tsp salt 2tsp pepper 1 med onion, chopped 2 green onions chopped 4 slices bacon (or turkey bacon) crumbled *wash and bake potatoes ahead at 400 deg for about an hour. let cool and cut into cubes- may leave skin on *saute bacon and med onion together in pot- remove from pot and set aside * place butter in pot- melt. add flour and stir continually until smooth * slowly add milk to flour/ butter mixture- with wisk, let thicken after each addition -always wisking * after all milk is added - put the onionand bacon back in and add the cubed potatoes, salt pepper * heat through and longer until as thick as desired * serve woth green onions and shredded cheese if desired
