6-8 potatoes
1/2-1 lbs bacon
1 med. onion chopped
1-2 celery stalks, chopped
2-3 hard boiled eggs, chopped
2T. water
2T. cornstarch
1 cup vinegar
1 cup sugar
Boil potatoes. While warm peel slice and set aside
fry bacon very crisp and set aside
mix water and cornstarch together and add to the bacon grease in the skillet. Add vinegar and sugar. Stir and bring to a boil.
Add potatoes, onion, celery, bacon and eggs, stirring GENTLY.
Keep on warm and continue to stir until ready to serve.
