Recipe: Ingredients 3 cups flour 3/4 tsp salt 1 tsp baking soda 2 cups sugar 1 tsp cinnamon 1 cup chopped walnuts or pecans 3 eggs, beaten 1 cup vegetable oil 2 cups mashed bananas or grated zucchini or grated carrots 2 tsp vanilla Instructions Combine first 5 ingredients, stir in nuts. Combine remaining ingredients and add to flour mixture, stirring just until dry ingredients are moistened. Spoon batter into muffin pans. Cook for 30-40 minutes at 350 or until toothpick inserted comes out clean.
