Recipe: |
1. 8 ounces rotini pasta, uncooked
2. 1/2 cup KRAFT LIGHT DONE RIGHT! Zesty Italian Reduced Fat Dressing
3. 1 pound medium shrimp, cleaned
4. 1 large red pepper, chopped
5. 1 cup packaged matchstick carrots
6. 1 cup fresh sugar snap peas
7. 2 cloves garlic, minced
8. 2 tablespoons KRAFT 100% Grated Parmesan Cheese
9. 1 teaspoon grated lemon peel
1. Cook pasta as directed on package.
2. Meanwhile, heat dressing in large nonstick skillet on medium heat. Add shrimp, vegetables and garlic; cook and stir 3 to 4 min. or until shrimp are pink and vegetables are crisp-tender.
3. Drain pasta; toss with shrimp mixture. Sprinkle with cheese and lemon peel.
Yield: 4 servings
