Meat Sauce

Recipe: 1 tbs bacon fat or olive oil 2 cloves galic, minched 1 large onion, finely chopped 2 stalks celery, finely chopped 1 lb ground meat 1/2 cup wine, red or white 1 tsp salt 1/2 tsp freshly ground black pepper 1 tbs Italian seasoning 1 can (28 oz) crushed or diced tomato 1 can (6 oz) tomato paste Heat the pan, add bacon fat or olive oil. Saute galic, onion, and celery over meduim heat for about 5 minutes. Turn heat to high, add meat, cook and stir until brown. Add wine, crush tomato, tomato paste, Italian seasoning. Bring heat to low and simmer for 30 minutes. Seanson to taste with salt and pepper. Basically I use this sauce with spaghetti. But you can make it into chili sauce by adding some chili power. Good for hot dog or taco.
