Cornmeal-Panko Crusted Tilapia

Recipe: Ingredients: • 4 Tilapia Filets • 3/4 cup cornmeal • 2 teaspoons seafood seasoning • 1 egg • 1/2 cup milk • 1 cup panko breadcrumbs • 3 tablespoons vegetable oil Directions: 1. Combine the cormeal and seafood seasoning in a shallow dish. In a separate dish, whisk together the egg and milk. In a third dish, place the panko breadcrumbs. 2. Place each filet in the cornmeal mixture making sure to coat each side well. Shake off any excess. Next, dredge the filets in the egg mixture. Finally, coat each side of the filets with the panko breadcrumbs. 3. Heat the oil in a skillet over medium heat. Once the oil is hot, place the filets into the oil. Fry each side for 2-3 minutes or until the breadcrumbs are browned and the fish is cooked through.
