MEXICAN CASSEROLE
1 pound ground beef, lean
10 1/2 ounces cream of chicken soup, * see note
10 ounces tomatoes with green chilis
8 ounces corn chips, crushed slightly.
1 small onion, chopped
1 green pepper, diced
8 ounces cheddar cheese, shredded
Cook ground beef until done. Mix together with the cream of chicken soup, tomatoes with chilis, onion, and green pepper. Layer corn chips then the meat mixture, repeating once again. Top with cheese.
Bake at 350 F for 30 minutes.
