Recipe: 2/3 CUP HERSHEY’ S COCOA 1 1/2 CUPS MILK 3 CUPS SUGAR 1/4 CUP BUTTER 1 TSP. VANILLA 1/8 TSP. SALT COMBINE COCOA , SUGAR, SALT, IN A LARGE PAN AND MILK GRADUALLY, MIX TOROUGHLY BRING TO A BUBBLY BOIL ON HIGH HEAT, STIRRING CONTINOUSLY REDUCE HEAT TO MEDIUM, AND CONTINUE TO BOIL THE MIXTURE WITHOUT STIRRING UNTIL IT REACHES A TEMP OF 234 F OR UNTIL A A SMALL AMOUNT OF MIXTURE FORMS A SOFT BALL WHEN DROP IN COLD WATER REMOVE FROM HEAT ADD BUTTER AND VANILLA. DO NOT STIR SET PAN IN COLD WATER TO HASTEN COOLING BEAT BY HAND ‘TIL FUDGE THICKENS AND LOOSES SOME OF IT GLOSS. POUR INTO LIGHTLY BUTTERED PAN, YIELDS ABOUT 3 DOZEN SQUARES.
