3 cups flour
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. salt
2 cups sugar
3 eggs, beaten
1 cup oil
2 cups bananas, mashed
2 tsp. vanilla
1 cup crushed pineapple
In a medium bowl, combine the flour, baking soda, cinnamon, and salt. Set this aside. In a large bowl mix the sugar, eggs, oil, bananas, vanilla and crushed pineapple. Add the flour mixture and stir. Pour the batter into 2 greased and floured loaf pans. Bake at 350 for 50-60 minutes. The bread is done when a toothpick inserted into the center comes out clean. After taking the bread our of the oven, while it is still warm, spread a light coating of butter on top of each loaf. Let cool for 10 minutes. Slice and serve warm. |
