Salmon Cakes

Recipe: Salmon Cakes 2 small (2.6 oz) packages of Pink Salmon -- skinless & boneless 1 1/4 C bread crumbs 3 eggs 1 1/2 tsp Old Bay Seasoning 1/2 tsp salt 1/2 tsp garlic powder 1/4 C diced roasted red pepper (from a jar) 1/2 C diced chopped onion (med onion) 1/4 tsp dill weed 2 tbls butter Mix ingredients together - EXCEPT FOR THE BUTTTER. Shape into patties - line a plate and cover with wax then refrigerate if making ahead. HEAT the butter in frying pan. Pan fry the salmon cakes 3-4 minutes on each side. DO NOT OVER COOK.....THEY WILL BURN Serve with white rice & canned veggie. Makes 7 cakes
