Fast Beef Chili

Recipe: 1/2 to 1 lb of a ground beef 2-cans of beans (pinto or red kidney)Rinsed 1-can of ranch style beans 1-large can of whole tomatoes 2-8 ounce cans of tomato sauce 2-3 garlic cloves minced 1 cup of diced onion 1 cup of each diced red and green pepper 1 to 2 bay leaves 1/2 tsp. of cumin (or to taste) 3 to 4 tbsp.s of chili powder (or to taste) In a large stock pot(6-8 qt.) add 1-2 tbsp.s of oil. Brown beef then add onions, green and red peppers, and garlic. Saute till soft. Drop in the bay leaves with the chili powder, cumin and mix well then add the ranch beans, whole tomatoes,2 cans of tomato sauce, and the 2 cans of rinsed beans. Stir well. Let simmer for about 5 to 10 mins, taste, my need to add more of the chili powder and cumin depending on your taste. Cook for 15 to 20 min at a simmer stirring off and on, or till beans are soft and it has thickened up. Serve with cornbread, or crackers. This can also be frozen.
