1 1/2 cups boiling water Topping
1 cup quick oats
1 cup white sugar 3 tbsp. butter softened
1 cup brown sugar 2/3 cup brown sugar
1/2 cup butter softened 1/4 cup cream or milk
1 1/3 cup plain flour 1 tsp. vanilla
1 tsp. baking soda
1 1/2 tsp. cinnamon
2 eggs
1 1/2 tsp. vanilla
Preheat oven to 350. Grease bottom and sides of 13 X 9 cake pan.Pour boiling water over oats and set aside to cool. Cream sugars and butter with mixer. Add oatmeal, flour, soda, cinnamon, eggs, and vanilla. Mix well. Pour into cake pan and bake for 30 - 40 minutes. Mix icing ingredients, poke holes in top of cake with a fork and spread icing on top of hot cake. Put under broiler for 1 - 2 minutes until bubbly. Prep time is about 10 minutes. |
