need:
lasagna noodles
cottage cheese (fat free preferably)
mozzarella cheese
one can tomato sauce
one can enchilada sauce (green preferred)
2-3 boneless skinless chicken breasts
Cook half box of lasagna noodles (whole wheat to make it extra healthy)
boil 2-3 chicken breasts
mix enchilada and tomato sauce
put some sauce on bottom of large casserole dish to prevent noodles from sticking
layer noodles, cottage cheese, chicken and cheese, adding sauce on top of each layer, top off the fianl layer with cheese
cook on 425 until sauce is bubbling
make it in advance and even freeze for later cooking |
