3-4 medium beets washed, unpeeled and tops cut off except for about an inch
olive oil
salt and pepper
Put the beets on a piece of foil big enough to wrap them up in. Drizzle a little olive oil over them and sprinkle with salt and pepper. Wrap the foil around them tightly.Put the packet on a cookie sheet and cook for 40 minutes. Let cool until you can handle them. The skin will come right off when you rub them.
I use a red dishcloth that I make wet with cold water and I rub the skins off. No red hands or stains! |
