1 pint Corn Relish
1 pint Stewed Tomatoes
4-6 Chicken Breasts
Olive Oil
Salt, Pepper, Garlic Powder (if desired)
Rice, cooked according to package directions
We cook this on the grill and therefore use a disposable pan to cook it in.
Spray 9x12 pan w/ cooking spray and add a touch of olive oil. Place chicken in pan and set on heated grill. Cook 4-6 min on each side (until no longer pink inside). Season if desired. Add Corn Relish to chicken & cook until heated through. Add Stewed Tomatoes and heat through. Serve over rice.
