Crockpot Fajitas

Recipe: 2-3 lbs Flank Steak (pre-cut) 1-2 Package McCormik Fajita Seasoning Mix 1 each of Green, Yellow, and Red Peppers 1 Yellow Onion 2 tbsp Oil 1 8-10 Pack of Flour Tortillas Any toppings you choose..Cheese, salsa, etc. -Mix seasonig and warm water in a measuring cup. -Brown meat in skillet on all sides in 1 tbsp oil. -Once the meat has browned, add the seasoning mix, stir and toss in the crockpot. Cook about 5-6 hours...check meat every hour, and stir. Meat will be really tender..not chewy! Once the meat is cooked...... -Cut peppers and onion into slices, and toss in a pan with a 1 tbsp oil to cook up. I add about 1 cup of the juice from the meat to the peppers to help season the veggies as they cook. Cook till tender, toss in the meat and you are ready for fajitas. Warm tortillas on the stove top or wrap in foil to warm in the oven. Add the toppings you like, and enjoy! Serves 4-6
