Southern Potato Salad

Recipe: INGREDIENTS 10 Medium size Boiling Potatoes 3 Large Eggs 1 Cup Mayonnaise 1 1/2 Tablespoon Yellow Mustard 1/4-1/2 cup Sweet Pickle Relish Salt & Pepper DIRECTIONS Boil Potatoes & Eggs in Salted water until fork tender(usually 8-10 minutes). Strain Potatoes and place eggs in a bowl with ice water. Separate egg whites from the boiled yolk. Add yolk to a Large mixing bowl and crush with fork, add mayo, mustard, relish, a few dashes of salt & pepper to taste. Stir all ingredients until well blended (Should be light yellow in color..if not add a touch more mayo). Cut the white part of eggs into a small chop. Add egg whites and boiled potatoes to large mixing bowl with the wet ingredients and stir. Refrigerate until ready to serve.
