This is easy to prepare, just cook the noodles, mix the ingrediants together, and pop it in the oven! I love kugel for dinner, but you can serve it as breakfast, lunch, dinner, or dessert!
Prep time: 15-20 minutes
Cook time: 40 minutes
Spray cooking oil
16 oz 8 oz wide noodles
8 T 4 T margarine (pareve)
12 6 eggs
1 c ½ c sugar
16 oz 8 oz crushed pineapple w/ juice
2 t 1 t vanilla
2 t 2 t cinnamon
12 6 pineapple rings
12 6 cherries
Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with cooking spray. Boil noodles as directed on package. Drain.
In a large bowl, microwave margarine until melted. Add eggs and beat well. Add sugar, crushed pineapple w/ juice, vanilla, and cinnamon. Mix well. Gently stir in the noodles.
Pour mixture into baking dish. Arrange pineapple rings on top, adding a cherry to the middle of each ring. (This is only for decoration; you can skip this step or just mix the cherries with everything else if you'd prefer)
Bake on middle rack about 40 minutes or until golden. (May brown too quickly if placed higher in oven.)
Serve warm or room temperature. Refrigerate any remaining kugel. Reheats well in microwave if tightly covered or a splash of milk is added.
