Southwest Egg Roll Pasta

Recipe: 1 lb pasta cooked & drained (keep 1 cup of the pasta water in a bowl)- 1 can black beans drained and rinsed- 1 can corn drained- 1 1/2tbls cumin- 1/2tsp salt-1/2tsp pepper-1 box frozen spinach cooked and drained-1lb ground sausage or ground chicken-1/2 onion chopped- 3/4c salsa-1 jar alfredo sauce- hot sauce or chopped jalapenos (optional)******** In a really big pan cook the sausage and onion until sausage is cooked through. Add beans, corn, spinach,cumin, salt and pepper, salsa and alfredo sauce. Stir until mixed. Slowly add some of the pasta water until it is creamy. Add hot sauce and/or jalapenos and cook until everything is hot. Add pasta water if it starts to dry out.
