Recipe: |
3/4 cup carrots
3/4 cup celery
3/4 cup onion
6 cups chicken broth
1 tsp. each: salt, parsley, basil
1/2 tsp. black pepper
Mix all ingredients in pot and bring to boil
While cooking above ingredients, peel and dice 4 cups of potatoes. Add to pot. Cook about 15-20 minutes until potatoes are soft.
While cooking above ingredients, brown 1 lb. of hamburger meat in a seperate skillet. Drain and add to soup mixture.
In seperate skillet melt 4 TBSP. butter, then add 1/4 cup flour. Add to soup mixture. Stir and let cook for 2 minutes. Then add 1 & 1/2 cups milk and 16 oz. Velveeta cubed. Let cook for 10 minutes. Then add 1/4 cup sour cream. Let mix well and serve. DELICIOUS!
