Name: Aimee S.
Base: Camp Lejeune
Recipe: this sounds complicated but it's actually easy and really good. the meatballs are good without the sauce too! 1lb ground chicken 1/4cup grated parmesan cheese, plus more for sauce 1 1/2 tbl dried or fresh parsley(I like fresh) 1tsp garlic salt 1/2 tsp pepper 1 1/2 tbl dried oregano 1 egg bread crumbs- seasoned milk 1 tbl olive oil plus more for cooking meatballs 1 container grape or cherry tomatoes cut in half(if you can't find these a can of diced tomatoes will work too) 1 pkg small shape pasta 1/2 onion diced Mix the chicken, egg, 1/4c cheese, herbs, salt, pepper and 1tbl olive oil. Add milk and bread crumbs until it comes together but is still very moist. On a big plate spread a layer of the bread crumbs. Cook the pasta and drain it but keep the pasta water from the pasta for the sauce. roll the meatballs into about 1in. balls and roll into the breadcrumbs and cook in a large saute pan in one layer in the olive oil until brown. To make the sauce add the onion and tomatoes to the pan with the meatballs. Cook for about 5 minutes and add drained pasta. Sprinkle with more parmesan cheese and add about 1/2 cup of the pasta water. keep stirring and adding cheese and pasta water until it all gets creamy.
