Loaded Baked Potato Salad

Recipe: This is a different twist on potato salad. Really easy and so good. 1lb red potatoes washed and cut into chunks 5 or 6 slices of bacon cut into little pieces 1 16oz. container of sour cream 4 or 5 green onions salt pepper olive oil Put the potato chunks on a cookie sheet and toss with olive oil, salt and pepper. Bake at 400 until crunchy and golden brown. Cook the bacon in a pan until crunchy reserve some of the drippings about 2 or 3 spoon fulls. In a bowl mix together the potatoes, bacon, sour cream and the bacon drippings. Add a little more salt and pepper and when it's mixed good stir in the green onions. Good warm or cold!
