Apricot Flounder

Recipe: 1 fresh flounder Cooking oil Large skillet Apricot Sauce 1/2 cup apricot jam 2 teaspoons brown mustard 1 teaspoon prepared horseradish Take flounder and remove head, and insides. Leave filets as a whole fish. Scale, then use filet knife and make 1/4 cuts diagaonally across fish both sides. The make cuts opposite direction. this should leave diamond shapes cut on fish. Cover fish with apricot marinade. Heat skillet with oil to extremly hot, add fish and let sit for 2-3 minutes each side to sear. Remove fish, add apricot sauce for dipping in seperate bowl. Serve! meat will fall off the fish it is so tender. This is the best flounder I have ever made! I get awesome comments about this dish. Great for 1 person or make a few and have small toothpicks or forks and allow guests to pick off diamond shaped meat. You eat it right off the fish.
