Quick Quiche
4-5 eggs, 1/2 cup cheese, 1/4 cup velveeta cheese, 1-2 tablespoons butter (or margarine), 1/4 cup spinach (frozen is fine), 1/2- 1 cup chopped ham (any left over meat will do, sausage, steak, bacon, ect.), 1/4 can cream of mushroom soup, salt & pepper to taste.
1 can of biscuits
Spray glass baking dish with cooking spray, line bottom of dish with biscuits, combine all ingredients in a bowl, and pour into dish. Cook at 375 until top starts to brown. Serve and enjoy.
This includes all major food groups. You may substitue broccoli or frozen peas for the spinach. Swiss cheese is also a great addition and bacon bits.
