Recipe: 2 or 3 servings worth of fish any kind of flaky fish like salmon, tilapia, halibut parchment paper 1/2 onion cut into slices 1/2 bell pepper cut into slices olive oil salt and pepper 1/2 lemon cut into wedges rip off a piece of parchment paper about 20 inches long.put it on a cookie sheet for support. put the fish on the paper about in the center. top with peppers and onions, drizzle with olive oil and season with salt and pepper, squeeze over the lemon wedges and drop them in too. fold the paper over the top and then roll and fold the edges almost like sealing a pastry all the way around. bake at 350 for about 15 minutes. the fish will always be moist and never overdone and it makes a side dish of veggies as well!
