1 can red enchilada sauce
10-15 flour tortillas cut into quarters(I use the small ones)
1 lb. ground beef
mashed potatoes (I make one packet of hungry jack instant or you can use leftovers just make sure they are creamy and not too thick)
1tsp cilantro & garlic powder
1/2tsp cayenne pepper
salt and pepper
dash of hot sauce
1/2 an onion chopped
shredded chedder cheese
Cook the onion, ground beef, hot sauce and spices in a pan. In an 8x8 casserole put enough enchilada sauce in the bottom just to coat. Put a layer of tortillas then half of the meat mixture, a layer of cheese, then spread half the mashed potatoes over, top with more enchilada sauce and repeat the layers again. Top with more tortillas the rest of the sauce and cheese. Cook in 350 oven for 15-20 minutes.
