1 can Chicken chunks, drained and broken apart with fork
1/2 Green pepper, chopped
1/4 Onion, chopped
4 tblsp low-fat mayo
Dash of salt & pepper
In bowl break apart chicken chunks with fork, add chopped green peppers, chopped onions and low-fat mayo. (I use Miracle Whip Lite) Add more mayo as needed if it is too dry for you. Season with salt & pepper.
Mix together all ingredients and spread on bread to make sandwich.
For a low-carb version, wrap chicken spread in a large lettuce leaf and serve with sliced tomato. |
