1/4 C of powdered sugar
1 Cup of all purpose flour
2 teas. of pumpkin Pie seasoning
1/2 tsp. of baking powder
1/2 tsp. of baking soda
4 eggs
3/4 cup of sugar
1 cup of solid packed pumpkin
Preheat oven to 375. combine flour, pumpkin pie spice, baking powder and soda in small bowl.
Place eggs in a mixing bowl beat eggs until thick, gradually add sugar and pumpkin,scrape and continue to mix. Beat on med. for 1 min. Gradually add flour mixture. Mix until incorporated. Fill cupcake liners 3/4 full bake for 10-12 minutes or until toothpick comes out clean.
Frosting
1 8oz package of Fat free cream cheese
2 cups of powdered sugar
1 tsp of vanilla
1 tsp of milk
beat until creamy
spread on cooled cupcakes and dust lightly with pumpkin pie spice.
