Scalloped potatoes

Recipe: 1 med. onion, chopped 6 oz. cream cheese, softened 1 14oz can chicken broth 1 tbsp. dijon mustard 1 1/2lb. potatoes,peeled,thinly sliced 2 cups ritz style crackers 3 tbsp. grated parmesan cheese 2 tbsp melted butter 2 tsp fresh parsley,optional Preheat oven to 350. Cook onions over med heat for about 5-7 min. or until tender. Add cream cheese, broth and mustard. MIX WELL. Remove from heat and set aside. Spray a 13x9 baking dish. Toss potatoes with the cream cheese mixture in a large bowl. Coat all the potatoes well. Spoon into pan. Top evenly with crackers, butter and parm.cheese. Bake for about one hour.
