Ingredients:
large russet potato
canola oil
kosher salt
Directions:
Pre-heat oven to 350 degrees
Wash potato thoroughly and pat dry
Using a fork, poke 8 to 12 deep holes all around to allow moisture can escape during cooking
Coat lightly with oil
Sprinkle with kosher salt (exact amount will vary to your preference and taste)
Place directly on middle rack of oven
Use a baking sheet or aluminum foil on the rack below to catch any drippings
Bake for 1 hour (for 1-2, add 15 minutes if baking 4) When ready, skin will feel crisp but inside feels soft.
Serve by cutting across the top from end to end with your fork, squeezing the ends towards one another. Top with butter, sour cream, and/or other favorite potato toppings.
