Lemon Apricot Cake

Recipe: 3 Eggs 1/3 Canola Oil 1 can apricot nectar 1 package of yellow cake mix (pudidng in mix) Heat oven to 350. combine all ingredients in large bowl and beat at med speed for 2 minutes. Bake in greased and floured 10 inch tube pan for 40- 45 min. cool right side up for 20-25 mintues before removing from pan. Spread icing while still warm. ICING: 1/4 cup butter 2 1/2 cups confectioner's suger 1/4 cup lemon juice 1/8 tsp grated lemon rind (optional) Blend all ingredients until smooth
