Stuffed Manicotti or Shells

Recipe: Here is a great recipe for stuffed shells or manicotti. 12 large manicotti shells (I prefer shells because they are easier to stuff, but sometimes hard to find at the commissary.) 4 cups shredded mozzarella cheese - divided 3 to 1 2 cups ricotta cheese 6 tablespoons chopped fresh basil or 2 tb dried basil 26 oz jar spaghetti sauce (I always use Marzetti's Marinara. The seasoning blends well) 1/2 cup grated parmesan 1)Preheat oven to 350 degrees F. Spray 13 x 9 baking dish with cooking spray 2)Cook pasta, drain, rinse with cold water. Lay pasta out so it will dry a little. 3)Mix 3 cups mozzarella with ricotta and basil. Fill your pasta shells using a teaspoon or put the filling in a baggie and snip the corner to squeeze filling into shell. 4)Spoon 2 cups sauce into baking dish and arrange stuffed pasta over the sauce. Pour remaining sauce over pasta and sprinkle with remaining mozzarella 5)Bake for 15 minutes. Sprinkle with parmesan and bake 10 minutes longer. (If you pre-made and the filling had time to chill, you may need to bake a little longer.
