Easy Beef and Bell Pepper Casserole |

Ingredients:
1 pound ground beef
1 medium bell pepper, chopped
1 small onion, chopped
2 8 ounce cans tomato sauce
2 4 ounce cans tomato paste
1 cup water
1 cup uncooked minute rice
Italian seasoning, to taste
grated parmesan cheese, optional
In a large frying pan, brown the ground beef; drain. Add the onion, bell pepper, tomato sauce and tomato paste. Simmer until the vegetables are tender-crisp. Add seasoning to taste. Add water and bring to a boil. Stir in uncooked rice, cover and remove from heat for 5 minutes. Serve with parmesan cheese, if desired. (May substitute a jar of pre-made spaghetti sauce for the tomato sauce and tomato paste.) |
