More than Meatloaf

Recipe: (This recipe might sound difficult but once you get started it is alot easier then it seems.) (Serves about 5) 2lbs. Ground Beef 2 large eggs 1 cup or bread or cracker crumbs(if you want a more dry loaf add another cup) 4 small potatoes 1 small onion 1 cup of ketchup (optional) -green peppers -jalapenos -mushrooms -pepper -garlic -salt Preheat oven to 425 degrees. Boil a large pot off water. Peel your potatoes then cut them into small chunks. Put potatoes into the boiling water and boil about 15-20 minutes. Then mash the ground beef with your hands add in your eggs and your bread or crackers and continue mixing until all is mixed together. Mince your onion and and start adding in your bowl of meat. And also add in your optional ingredents. By this time you potatoes should be done drain your potatoes and carefully add into your meatloaf. Once all is mixed in pull out a casserole dish or a 8x8 pan(any pan will work really). Put your meat mixture into the pan and slowly start forming into a loaf according to the size of your pan. After forming into your loaf start spreading your ketchup on top. Stick in oven and bake for about an hour. I like to pull it out half way through and soak some of the moisture out. After an hour I like to pull it out of the oven and cut it down the middle to make sure it isnt still pink. If it is still pink put it back in for about another half an hour. Once it is cooked through let it cool for about 5 minutes cut into slices and then serve.
