Perfect Potato Salad

Recipe: 2 lbs med red potatoes, peeled and cut into quarters 1 ½ tsp salt divided 6 eggs hard cooked ¼ cup veggie oil ½ tsp white vinegar ¾ cup mayo 1 tsp Tabasco pepper sauce 1 sweet pickle finely chopped 1 stalk celery chopped ½ green bell pepper chopped Boil potatoes and 1 tsp salt about 15 min or until tender. Drain potatoes. Peel eggs & separate yolks and whites. In large bowl mash yolks and stir in oil and vinegar add mayo Tabasco and remaining salt. dice potatoes and add to mixture along with pickle, celery and bell pepper. Cut egg whites into small pieces and add to salad. Mix well. Keep refrigerated until served .
