1 1/2 lbs. low-fat ground beef
1 C. fresh breadcrumbs (about 1 1/2 slices of bread)
1 egg
1 1/2 tsp salt
1/4 tsp pepper
1 C. ketchup
2 Tbs. brown sugar
2 Tbs. yellow mustard
2 Tbs. apple cider vinegar
In a lg. mixing bowl, combine first five ingredients and 1/2 C. of the ketchup. Mix lightly, and put into loaf pan. Mix remaining ingredients, plus the remaining 1/2 C. ketchup; spread over top of meat mixture in loaf pan. Bake for 1 hour at 350 degrees. Remove from oven and let stand for 5 min. before serving. |
