4-5 chicken breast halves; boned, skinned and cut into chunks
1/4 C. all-purpose flour
Salt & pepper
1/2 C. peanut oil
1/4 C. chopped scallions
1/4 C. sugar
1/4 C. soy sauce
2 Tbs. sesame seeds
Heat peanut oil in skillet over med-high heat. In a shallow bowl or plate, dump the flour seasoned with salt & pepper. Dredge chicken in flour; place chicken in skillet. Cook chicken pieces in batches 3-4 minutes each (or until lightly browned). Drain chicken on paper towels, and cover to keep warm. Combine sugar and soy sauce in a saucepan; heat until sugar dissolves. Add chicken, scallions and sesame seeds to sauce. Cook until warmed through. Serve with white rice if desired. |
