1-1/4 lbs. new potatoes, scrubbed and patted dry
1/4 cup small bay leaves
2 T. olive oil
Preheat oven to temperature 375°
Using a sharp knife, cut a slit halfway through each potato.
Place bay leaves in each potato and set aside.
Drizzle oil in a roasting pan and heat in oven. About 5 min.
Remove pan from oven and arrange potatoes in pan.
Season with salt & pepper.
Roast in oven about 50 min or until potatoes are golden and tender. |
